Chef Question…about Wusthof Knives..please Help!!?

I’m wanting to get a set of Wusthof Knives for an upcoming chef.
(1) I need to know the real difference between the Wusthof lines..,like the “Classic” and “Culinar”…and etc. Which is the best? Which one would you get or prefer?
(2) I know a great chef only buys open stock…but can you buy like a block set and not use the block (I know the block is not good to use)…would it be cheaper to buy a block set and not use the block, or just buy them individually??

Is there a real difference to buy this and not buy them individually?? Which is better??

Wusthof Cutlery Marks?

I recently purchased some Wusthof classic Cutlery. Can someone tell me what the markings on the blade mean? Specifically the little “tic-tac-toe” looking grid on the far right side of the blade. I understand the other markings. Just can’t find out what that tic tac toe looking grid means…

I want to buy a chef knife, ive pretty much narrowed it down to these 3 brands, however i cant decide which one to go for ?
Id like to spend about 70$ up to 110$ for the chef knife, at that price which brand will offer me the best knife ?
I know im supposed to actually try them first, hold them in my hands etc but i will be ordering online… I have small hands for a man, but i dont think that will be a problem… ive pretty much had really crappy knives up to now in my life so im sure anyone of those will be a big improvement, but id like to spend my money on the best one i can afford.
