I’m looking to buy an 8 inch chefs knife for use in the home and have approx $70 (£35 ish UK) to spend, how good is the Misono Molybdenum Steel Series No.512 Gyuto 210mm? I’ve also looked at the victorinox fibrox, global G-2 and the Tojiro DP….
any suggestions guys?

How To Prevent Stainless Steel Getting Rusty In The Dishwasher?

I have a Hotpoint SDW80 dishwasher.
It’s very good but on the normal program (the one I use the most) leaves the stainless steel like pots, cutlery and so on labelled ‘dishwasher safe’ rusty.
Is there anything that I can do to prevent that happening? Do I have to stop the program towards the end when the drying time is active, would be that OK or I have to wait till the program has completed?
Any other suggestion?

a chef steel isn’t really for sharpening a knife.. it’s meant only to hone the blade after it’s been sharpened.. when a knife has been sharpened there is a thin strip of metal at the edge that has a tendency to bend one way or the other, because it is so thin. Honing it gets that strip of metal to stand straight..

Steel Cutlery Back On International Flights?!?

I’ve just returned home from a trip to the States and was shocked to find that steel cutlery is now being used again. I flew with Continental Airlines and the flight attendant told me and my husband that since it’s been “a while” since 9/11 Contintental feels it’s safe to get rid of plastic cutlery. We flew the morning after the car bomb attempt at Glasgow and just two days earlier car bombs were found in London. Does anybody else think that putting steel knives and forks back on flights is just a bit crazy? We have to go through so much security just to get on the plane..it seems stupid to go through all of that just to get handed steel knives and forks during mealtime.

For home use, I don’t see much of a difference. If you were using it as a tool in your job, I would get the chromium steel. I don’t feel that stainless holds an edge as well. Professionals have their cutlery sharpened quite often.
