Pro Chef Question: What Knives Do You Like To Use? What Knives Do You Think Would Be Best To Use?

Hi Joey E, I think it is different for every chef you ask. I like Sabatier, And Gustaf Emil Ern knives. Yet I went out to buy a set over 20 years ago (and I’m still using the same set) and ended up getting Victorinox Swiss knives these of the swiss army fame. I am glad I did and they have served me well for over 20 years as I said above. These are slightly heavier than I was used to at the time however they are a good set of knives. Now they sell most chefs knives with neoprene or some such plastic handles as they are supposed to be more hygienic. You can also buy not so well known makes which are up to the job for most kitchens and are about a quarter of the price. You can buy them individually and have them in a knife roll,but I just happened to come into a bit of money at the time so I got a set in a briefcase. I never thought to look until now and I nearly fell off my chair when I saw the price of them. see the link below. I paid about just under £300.00 back at that time and they’ve nearly doubled for the rosewood handled ones. That was still a lot of money in those days.So I think I’ll have to get them insured. There are quite a few sites online that you could check out if you are about to buy some,as the Cutlers or kitchen supply stores will have a larger mark up. I would suggest that you don’t buy online though until you have handled the same sort of knife, as you want a good weight and balance for your hand and you cannot tell that from a photo. You could test them for weight and balance in a shop and then go online and compare prices.
