    Really depends on what you are using them for, and what your personal preference is. I gave away almost all my steel knives, and am using zirconium knives now for most purposes. I did keep a couple of my filet knives, however, as they are old carbon steel blades that hold an edge forever, and have been sharpened enough times that their profile has been changed slightly to my preference. The Zirconium knives are pricey, but have not needed sharpening in two years! I have one that I use excluvely with veggies, and one for meats, as well as a couple general purpose ones that are shaped more like old paring knives…
