I'm an amateur chef and I love Henckels. I got a set with the block for $49.95 at Hecht's. I've seen the set many places including sharpener for the same price.

That sounds perfect. Most chefs will rely heavily on two knives for all general kitchen work. A 6 inch chef's/cook's knife and a small two-three inch paring knife. There are many brands and quality does vary a lot. Forget designer home ware these often just look good. Good brands to trust are "Victorinox" (makers of the swiss army knife), Sabatier and Global. Victorinox in particular have a wide range in all price levels and are the most widely used brand in catering colleges.
