What Is A Good Low To Mid Priced Chef’s Knife To Give To A Begining Chef? ?

I am looking to get an low to mid priced, decent chef’s knife to give to my fiance. He has dreams of being a french chef, so normally only the best will do. However knives can be very expensive, and for our first set I’m trying to buy one at a time mid level, because I’m not made out of money. I was going to start off the set by giving him a 6″ Chef’s knife in his stocking this year.
Any advice, tips or suggestions would be greatly appreciated. Thank you!

    That sounds perfect. Most chefs will rely heavily on two knives for all general kitchen work. A 6 inch chef’s/cook’s knife and a small two-three inch paring knife. There are many brands and quality does vary a lot. Forget designer home ware these often just look good. Good brands to trust are “Victorinox” (makers of the swiss army knife), Sabatier and Global. Victorinox in particular have a wide range in all price levels and are the most widely used brand in catering colleges.

    I’m an amateur chef and I love Henckels. I got a set with the block for $49.95 at Hecht’s. I’ve seen the set many places including sharpener for the same price.
