    just about every chef I know uses fairly nice Japanese knives, Global is a good choice, they are very well balanced, hold their edge forever, lightweight, and comfortable. The global will run about $100-$200 per knife. Shun is another popular choice, with higher quality steel and cost about $200-$300. TRUELY top notch Japanese knives typically run in the thousands and ten thousands, and usually require a trip to Osaka.
    Many chefs don’t like German or European knives because they are very heavy, and uncomfortable after hours of use.
    If you are going to get a set, I would recommend a 6-8″ Santoku knife, a 10-12″ French style knife, a good paring knife, a 10-12″ serrated knife with a point, and a fillet or boning knife. I also have a cheap Chinese cleaver in my knife roll for heavy duty chopping.

    Global are pretty nice knives. I have a set of them and they maintain their edge very well. I’ve had them for about 6 years now and absolutely love them. Here’s a website with the “top picked” knives as well. I hope this helps

    Go to http://www.potterybarn.com . I buy all my knifes there because they have great quality brands and styles of blades. Don’t worry about which brand at this store, they carry top of the line cutlery.
