    I am a former chef from Canada, and for home use a nice 8″ french knife is a good tool for any kitchen, just buy it from a good knife supply store or a kitchen store, Henkel, Wurstof, Sabatier, Global, Victorinox, Gerber and Cutco are names to look for,just let them allow you to hold the knife and pick the one with the grip and weight you like, after that you can add to your collection, a couple of nice paring knives is a good second purchase.
